Ingredients
Ingredients for cutlets
Potatoes 2 large boiled, peeled and mashed
Ginger powder 1 teaspoon or paste Garlic powder 1 teaspoon or paste
Salt to taste
Black pepper 1 teaspoon
Chicken powder 1 teaspoon
Paprika or red chilies powder 1 teaspoon
cumin powder 1 teaspoon chopped green chilies & coriander as desired
For filling have used Dum Qeema but u can use
other mince also
Chicken or mutton or beef mince 500 gms
Onion 1 large thinly sliced and fried golden Brown
in mustard oil
Yougurt 1/2 cup
Garlic paste 1 tablespoon
Ginger paste 1 teaspoon
Salt to taste
Roasted and crushed cumin 1 Roasted and crushed
tablespoon
coriander 1 tablespoon
Red pepper 1 teaspoon Kashmiri red chili powder 1 teaspoon
Turmeric powder 1/2 teaspoon almond powder 1 tablespoon
sesame seeds roasted 1 tablespoon Mustard oil for marination 4 tablespoons
cooking oil
Method
Marinate the mince in all the spices, yogurt,crushed crispy fried onion and mustard oil In a wok Add 1/2 cup cooking oil and finely chopped onion and fry until translucent Add the marinated mince and cook on medium
flame for 15 min until the color changes Now slow the heat and add 2 tablespoons of roasted almond powder and sesame seeds & cook on low flame for 5 min until the oil comes up ✔give the dum of coal and garnish with green
chilies, coriander and ginger
mozzarella cheese for filling 1 cup
For coating
Egg 2 season with salt and pepper
Bread crumbs 1 cup
Assembly of cutlets
Make a round ball from potato mixture and fill in
with mince filling and cheese and make round cutlets
Dip in egg and bread crumbs Refrigerate for 1-2 hours
shallow fry in oil until golden crisp from both sides serve with ketchup and chutney
